Sponge Candy



I used to make this candy for my step children quite a bit when they were little.
The video is this recipe method on a large scale, without divulging the actual recipe.

1 cup sugar
1 cup dark corn syrup
1 tbsp vinegar
1 tbsp baking soda


Cook sugar, corn syrup and vinegar to 300 degrees on candy thermometer, stirring often. Remove from heat; add baking soda. Mix well (this foams up-use large pan). Pour into 13x9 inch pan, buttered lightly. DO NOT BUMP PAN OR STIR. Let cool, break into pieces.

Optional:
Melt chocolate chips and dip the broken pieces of sponge candy. Set on waxed paper to dry.
